I found a recipe for cabbage soup that I thought looked yummy.

INGREDIENTS
vegetable blend juice, 2 qts
beef broth, 1 can (14 oz)
diced tomatoes, 1 can (25 oz)
onion soup mix, 1 package
green beans, 1 can
baby carrots, one pound bag
celery, 10 stalks
green peppers, 2 of them
onions, 3 medium
cabbage, one head

DIRECTIONS
Empty the vegetable juice (can substitute tomato juice), beef broth and onion soup mix in a large pot. Add the can of tomatoes, including the liquid. Drain the green beans and pour into the pot. Dice all remaining vegetables and add to the pot. Simmer until the vegetables soften.

Makes 15-18 servings, depending on the size of your bowl!

I made it today for lunch. It was wonderful! The recipe made so much that I could be eating it for several days. I’ll probably freeze a bunch and thaw it on occasion so that I don’t have to eat it so much that I will get sick of it and never want to eat it again.
